Italian Pizzeria in Prague: The Art of Pizza
Our Italian pizzeria in Prague was born from a passion for high-quality artisan pizza, where experience, sensitivity and attention to every detail make the difference. Everything begins with carefully selected ingredients: from water and salt to extra virgin olive oil and flour, all the way to the toppings that complete each pizza. Every ingredient is chosen with care, because it is the balance of simplicity, technique and quality that creates a pizza capable of expressing the authentic taste of Italian tradition.
Our Dough
Our dough begins with the selection of excellent-quality Italian flours, stone-ground and enriched with wheat germ, chosen to give our pizza aroma, flavour and fragrance. But what really makes the difference is time. We use a portion of 100% natural sourdough starter and allow our dough to mature slowly, at a controlled temperature, for 24 to 72 hours.
Without rushing the process, we allow the flour to develop its characteristics naturally. The result is a fragrant, light and flavourful pizza that is pleasantly easy to digest.
For us, a great pizza begins with the quality of the ingredients, patience and respect for natural fermentation times. This is the character we want to give our Italian pizzeria in Prague: quality, authenticity and a passion for true Italian pizza.
